BÉARNAISE SAUCE

 

Ingredients

¼ Cup

Margarine

2 Tbls

Hot water

2

Egg yolks

1 Tbls

Tarragon vinegar

1 tsp

Finely chopped onion

¾ tsp

Finely chopped parsley

1/8 tsp

Salt

½ tsp

Paprika

 

Directions

1.  In a medium sauce pan, melt butter with hot water.

2.  Stir in egg yolks

3.  Beat until frothy

4.  Stir in remaining ingredients

5.  Cook while stirring constantly just until the broth thickens and smoothes (about 8 minutes)

6.  Serve warm over red meats, fish, eggs, and some vegetables work well
