Uncle Rusty's Famous Ribs

 

Ingredients

 1/2 rack

St. Louis cut per person. Example - 5 people = 5 full slabs... hu? :)

 

Salt

 

Pepper

 

Onion salt

 

Paprika

 

Garlic salt

 

Chopped / dried onion flakes

 

Cajun seasoning

  Onion powder
  Favorite BBQ sauce

 

Directions

1.  Cut ribs into 2 rib portions and stand them on their sides, packed tight, in a pan for the oven or in an electric skillet. With 5 people and 8 full slabs, this could take a while...

2.  Generously sprinkle the tops of the ribs with salt, pepper, onion salt, paprika, garlic salt, chopped or dried onion flakes, and a little Cajun seasoning.

3.  Add about 1 to 2 inches of water in the pan so they don't stick.

4.  Cover and cook or bake at 350 to 375 for about 2 hours (1 1/2 hours in the electric skillet). Add water if needed during this cook time.

5.  After the above cook times, turn the ribs so tops are on the bottom or the pan, then add or remove water as needed. Cook another 3/4 to 1 hour, until the pinched meat pulls away but does not completely fall off.

6.  Refrigerate if preparing before the dinner.

7.  Get the grill HOT.

8.  Place bone side down and sprinkle with onion powder or salt.

9. When bone side is sizzling and has a good dark color, put the BBQ sauce on then turn the ribs.

10.  Grill until there is a good color on the meat side, then turn again to get good caramelization of the sauce.

11.  Remove from direct heat and try not to burn. With 5 people and 10 full slabs the feast should be great!
