LEMON BARS

 

Ingredients

2 1/4 cups

Flour

1/2 cup

Confection sugar

1 cup

Margarine, softened

4

Beaten eggs

2 cups

Sugar

1/3 cup

Lemon juice

1/2 tsp

Baking powder

 

Directions

1.  Sift together 2 cups flour and 1/2 cup confection sugar.

2.  Cut in margarine with fork until mixture clings together.

3.  Press into greased 9x13 pan.

4.  Bake at 350 for 20 to 25 minutes or until lightly brown.

5.  Combine eggs, sugar, and lemon juice and beat well.

6.  Sift together 1/4 cup flour and baking powder, then stir into egg mixture.

7.  Pour over baked crust and bake at 350 for 25 to 30 minutes or until lightly brown.

8.  Sprinkle with additional confection sugar

9.  Cool and cut into bars.
