BLUEBERRY COFFEE CAKE

 

Ingredients

½ C

Shortening

¾ C

Sugar

1

Egg, beaten

2 C

Flour

2 tsp

Baking Powder

½ tsp

Salt

½ C

Milk

2 C

Blueberries (drained if canned)

½ C

Sugar (Topping)

¼ C

Flour (Topping)

½ tsp

Cinnamon

¼ tsp

Butter, soften

 

Directions

1.     Cream Shortening & Sugar

2.     Add Beaten Egg

3.     Add alternately, combined dry ingredients & the milk.  

4.     Fold in Blueberries

5.     Pour Batter into well greased floured tube pan.

6.     Sprinkle topping on cake.
